A Stack is a group of hardware / software (applications) related to where the incident happened. For example, a poor performance on a web site may have website, App Connectivity, Web Service, Database Service, Virtualization, Storage, Network, Load balancer, Security as a group (or Stack) where the problem could have happened any where. The stack allows to check at those layers where the problem has happened while providing holistic approach of overall solution.
An example Stack where Application performance degraded was raised as incident.
